Donuts

Donuts
2 1/8 cups warm water (100 – 110 degrees)
2 Tablespoons dry instant yeast
Pinch of Sugar
6 cups Donuts  Mix
Extra Donuts Mix as needed
Parchment paper or waxed paper cut into 30 – 4” squares

Glaze:
4 ½ cups powdered sugar
¾ cup hot water
2 drops vanilla extract

In a large mixing bowl-
Mix water with yeast & a pinch of sugar. Cover and let stand for 5-8 minutes or
Until foamy or bubbly
Add Donut Mix to the yeast mixture. Blend together for 5 minutes. If using an electric mixer, use the dough hooks. Constantly scrape sides of bowl. Add extra donut Mix if needed (1 Tablespoon at a time.) Blend again for approximately 10 more minutes until smooth and elastic. Ideal Temperature is 82 degrees.

Turn dough into a lightly greased bowl. Cover with a towel or plastic wrap. Let rise for 45 min. While dough is rising, cut waxed parchment paper into 30 4" squares. Take dough out of bowl and punch dough down with hand. Cover completely with plastic wrap or a white garbage bag. Let rise for½ hr. Spray counter with cooking oil. Turn dough onto greased counter. Divide dough in half. Roll each half of dough to ½" thickness. Let rolled dough rest 3 minutes. Cut with a floured donut cutter or a drinking glass. Use a milk lid to cut donut hole in middle. Flour glass or donut cutter before each new cut. Gently place each donut on a 4" square waxed paper piece. Place on large cookie sheet pans. Cover.

Let rise until very light and fluffy. (45-60 minutes) Repeat the above steps with the donut scraps .... roll to ½"thickness, let dough rest 3 minutes, etc. 

While donuts are rising make glaze. In a large mixing bowl add powdered sugar, hot water and vanilla extract. Mix until smooth. Set aside.
While donuts are rising prepare oil. Heat olive oil or vegetable oil to 375-380 degrees. (If oil is smoking, it is too hot! Use a cooking thermometer.) Make sure the oil doesn't cool down while you are frying. Check oil temperature often. Carefully add 1 donut into oil by lifting donut still on 4" waxed parchment paper. DO NOT touch dough. Turn upside down. Don't break the seal between dough and paper! Gently let donut drop off waxed parchment paper into hot grease and fry about 30-40 seconds until golden brown. Use long wooden sticks to turn over and then fry about 30-40 seconds on the other side. Use the long wooden sticks to remove the fried donuts and place on paper towels to cool.
When the donuts are cooled to 165 degrees, using the long wooden sticks again, gently place the fried donut into glaze. Turn over. Pull out glazed donut and let rest on a cookie sheet or waxed paper while the glaze runs down the sides.
Serve and enjoy while fresh and warm.

Pancakes

Potadonut® Pancake

 

1¼  cups Potadonut® Donut Mix
1 Tablespoon sugar
1¼ tsp baking powder
¼ tsp salt
¾ cup milk
2 eggs
Cooking Spray
Mix all ingredients together until well combined. Drop by the spoonful onto a hot griddle or waffle maker. Cook until bubbles appear on edges then flip, cooke second side til lightly brown and serve!
For a sweet variation, dice half of a golden delicious apple into small chunks, add to batter than cook as usual.  

Waffles

1¼ tsp baking powder
¼ tsp salt
¾ cup milk
2 eggs
Cooking Spray

Mix all ingredients together until well combined. Drop by the spoonful onto a hot griddle or waffle maker. Cook until golden brown and serve!

For a sweet variation, dice half of a golden delicious apple into small chunks, add to batter than cook as usual.  

German Pancakes

German Pankcakes aka Swedish Pancakes aka Dutch Pankcakes aka Hootenannys aka Pannekoeken

You know this one. Made for many years as a puffy breakfast, lunch or dinner item.

Preheat oven to 400* degrees
Mix in blender, the following ingredients:

3/4 C. Potadonuts© mix
3 Eggs
3/4 C Milk
Lemon, Powder Sugar or Syrup
Take 1/2 cube of butter, place it in the Pyrex dish, then place that dish in the oven while it pre-heats. The size is usually 9"x12", or in a large glass pie plate. When oven is pre-heated, tilt the melted butter all over the bottom and the sides, be careful, the butter may splatter. Then pour the batter mixture into the dish or plate.

Bake at 400* F cook for 13-16 minutes until nicely browned and the side's poof up.

Monkey Bread

Monkey Bread Recipe

Ingredients:

2 C. Potadonuts® Mix
1 t. Cinnamon
1/2 C. Granulated Sugar
1/2 C. Chopped nuts (walnuts are great)
1/2 C. Raisins (optional)
3/4 C. Butter or margarine, melted (unsalted is better)

Directions:

Lightly grease 12 cup fluted tube pan (Bundt pan) or bread pan with shortening or cooking spray. in large storage plastic food bag, mix granulated sugar and cinnomon. For super tasting Monkey Bread, follow the instructions as if you are making Potadonuts®. When you roll the dough out to one half inch thick, cut out small pieces about half the size of a playing card. Dip the piece in the cinnamon sugar mix bag. Shake  in the bag to coat, add walnuts and raisins on teh biscuit pieces. Start layhing the pieces in a bread pan or a Bundt pan allow the pieces to raise for 1/2 hour.  In small bowl, mix brown sugar and butter; pour over pieces. Bake at 350* degrees for approx 30 minutes or until golden brown and no longer doughy in the center. After removig from teh oven leave in pan for 10 minutes. Best served still warm. Turn upside down onto serving plate, watch the many hands try to get one of the first bites!

Funnel Cake

Funnel Cakes

2 cups of All purpose flour & 2 cups of Potadonut mix

2 tbs baking powder

1 tbs salt

3/4 cup of sugar

Mix all dry ingredients well

Then Add:

3 1/2 cups of warm water

Add 3-4 inches deep of Vegetable oil to cast iron pan

(Vegetable Oil) let heat up on medium heat.

To test if your oil is ready pinch a small piece of batter and put it in the oil. If it starts to fry and slowly turns golden brown then the oil is good.

If the dough immediately SINKS let it heat up a bit longer.

Best if using a stainless steel mesh colander to lift funnel cakes.

Sprinkle with powdered sugar/cinnamon sugar/honey butter.

Crepes

Crepes

Put 2 cups milk

3 eggs in blender on low speed

Slowly add 1 cup flour

Pan should be hot and well oiled. Spray works best for me.
